I am really curious about how to eat purslane because I came across it at the farmers market last week while looking for some fresh greens. The vendor was raving about its health benefits and how it's packed with Omega-3 fatty acids, which sounded great! I bought a bunch to give it a try but now I'm like... what do I do with it?! I’ve read a bit online, and some people say you can just toss it in salads, while others suggest sautéing it — but honestly, I'm confused about how to eat purslane properly. Do I need to wash it a certain way or prepare it before eating? I also heard it has a slightly lemony taste, which sounds interesting, but I can’t imagine how that would go in my usual salads or whatever else. So, like, what would be some easy recipes or ideas on how to eat purslane? I was thinking maybe I could combine it with some tomatoes and feta... does that sound good? Or is there a specific way you should always prepare it? Hope this isn't a dumb question!
